{Clean Eating Blueberry Oat Bread}

You guys know I love a good oat bread. They are just way too easy and my whole family loves them. My husband requested that I make a blueberry version and I have to say...I am glad he did! This turned out so tasty! I feel the urge to make another! My kids actually did the majority of the work. It is THAT easy!!

Clean Eating Blueberry Oat Bread

  • 2 cups old fashioned oats (Processed into oat flour using a food processor)
  • 1/2 cup banana (mashed)
  • 3/4 cup fresh or frozen blueberries
  • 1/2 cup real maple syrup or honey
  • 1 1/2 cups unsweetened applesauce
  • 1 1/2 tsp. baking powder
  • 2 organic eggs
  • 1 tsp pure vanilla extract

Pre-heat oven to 350 degrees.

Add all ingredients to a medium sized bowl.

Stir well. Check out my little helpers! :)

Pour batter into a metal loaf pan that has been sprayed with olive oil or coconut oil non-stick spray. Sprinkle a few oats on top if you would like.

Bake for 55 minutes or so or until a toothpick inserted in the middle comes out clean.

Allow to cool and DEVOUR! Store in airtight container.

**This is also really yummy cold right out of the fridge. That is how I eat all of my oat breads!

Hope you all have a fabulous day!!

{Spiced Apple Bread}

This bread is OH SO GOOD! It would be perfect for Thanksgiving morning (or any morning actually), a great snack, or a super sweet gift! These breads don't last long in my house! They are just way too easy and delicious!

Spiced Apple Bread
  • 1 1/2 cup old fashioned oats (processed into flour using a food processor or 1 cup oat flour)
  • 2 cups chopped apples (I used Gala)
  • 1 cup unsweetened applesauce
  • 1/2 cup plain Greek Yogurt
  • 2 eggs
  • 1 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 cup honey
  • 1 1/2 tsp. baking powder
  • pinch salt
Pre-heat oven to 375 degrees.

Add all ingredients to a medium bowl and stir to combine. Add to a loaf pan that has been sprayed with non-stick spray. *Sprinkle the top with some extra oats to make it pretty!

Bake for 65-75 minutes or until toothpick inserted comes out clean and bread is cooked through.

On a side note....this bread was featured on my first VLOG.....check it out here

This bread definitely moved up the list to one of my favorite oat breads....it is up there with my Strawberry Banana Bread and Peach Ginger Bread! YUMM!
