{Clean Eating Classic Meatloaf}


Growing up I was never a huge fan of meatloaf but the older I get...the more I love it. It is an easy dinner that everyone loves! It took no time for me to whip this up and put in the oven! My whole family devoured it! Makes great leftovers too...if you have any left!


Clean Eating Classic Meatloaf

{serves 4}

  • 1 lb. extra lean ground beef or turkey
  • 1 small onion (chopped)
  • 1 small organic green pepper (chopped)
  • 1 organic egg
  • 1 slice of Ezekiel bread (made into breadcrumbs with food processor)
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • 1 tsp. pepper
Topping:
  • 1/4 cup organic ketchup
  • 1/2 tbsp. organic maple syrup
Pre-heat oven to 350 degrees.

Combine all ingredients, except for the topping ingredients, in a large bowl and mix just enough to combine thoroughly.  Place in a loaf pan that is sprayed with olive oil spray. Mix toppings in a small bowl and spread on top of the meatloaf. 

Bake for 50 minutes. Remove from oven and allow to sit for 5 minutes before cutting.

ENJOY!!

    1. I find it at my local grocery store. It is in the freezer section. The brand name is Food For Life. I know they also sale it at Whole Foods or Trader Joes.

  4. I made this last night and had leftovers today for lunch. It was awesome! I was pleasantly surprised by the ketchup and maple syrup flavor. I also added a little Cayenne to spice it up a bit!

  6. I made this last night. My husband loves meatloaf and I had never made it before, so I was a little hesitant that my first attempt was the healthy version. Surprisingly, we both absolutely loved it. It was delicious! We paired it with "faux mashed potatoes" (cauliflower) for a true comfort meal without all the guilt. We loved it. He even went back for seconds. Thanks for the recipe! I'm trying another one of yours today for my lunch!
