{Peanut Butter Blender Oat Bread}

Happy Tuesday!!

I am pretty sure that you guys know by now that I LOOOVE peanut butter. Right? I put it on everything. It is crazy to me that I haven't made a peanut butter "bread" recipe yet?

I love to make oat breads during my meal prep. This is so great on crazy mornings. All you have to do is grab it out of the fridge (if you like it cold), slice it up and breakfast is served!

It is a toss up for me....I love the Strawberry banana and Pumpkin bread  SO MUCH but peanut butter is definitely close to the top. So good!

I mean....perfection for sure! :) Enjoy..... all of you peanut butter lovers!

Peanut Butter Blender Oat bread

  • 2 cups  old fashioned oats
  • 2 medium ripe bananas + 1 banana for sliced topping
  • 1 cup plain Greek yogurt
  • 1/2 cup natural chunky peanut butter (the drippy kind with 1 ingredient)
  • 1/3 cup honey
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 eggs
Add all ingredients (except extra banana for topping) to blender. Blend until smooth and combined. Add to 9x5 loaf pan that has been sprayed with non-stick spray. Add the extra banana in slices to the top.

Bake at 400 degrees for 40-45 minutes or until a toothpick inserted comes out clean. If the top starts to get too brown....just lay a piece of aluminum foil over the top until bread is done.

Allow to cool in pan for 10 minutes before removing from pan.

Store in air-tight container. We love our oat breads cold straight out of the fridge but it is delicious cold or room temp. :)

ENJOY!!

Have you tried any of my oat breads?? What's your fave??

{Clean Eating Blueberry Oat Bread}

You guys know I love a good oat bread. They are just way too easy and my whole family loves them. My husband requested that I make a blueberry version and I have to say...I am glad he did! This turned out so tasty! I feel the urge to make another! My kids actually did the majority of the work. It is THAT easy!!

Clean Eating Blueberry Oat Bread

  • 2 cups old fashioned oats (Processed into oat flour using a food processor)
  • 1/2 cup banana (mashed)
  • 3/4 cup fresh or frozen blueberries
  • 1/2 cup real maple syrup or honey
  • 1 1/2 cups unsweetened applesauce
  • 1 1/2 tsp. baking powder
  • 2 organic eggs
  • 1 tsp pure vanilla extract

Pre-heat oven to 350 degrees.

Add all ingredients to a medium sized bowl.

Stir well. Check out my little helpers! :)

Pour batter into a metal loaf pan that has been sprayed with olive oil or coconut oil non-stick spray. Sprinkle a few oats on top if you would like.

Bake for 55 minutes or so or until a toothpick inserted in the middle comes out clean.

Allow to cool and DEVOUR! Store in airtight container.

**This is also really yummy cold right out of the fridge. That is how I eat all of my oat breads!

Hope you all have a fabulous day!!
