{Banana Chia Pudding}

This may be my favorite new snack/dessert. It is beyond yummy and so good for you! I love all things banana and chia so the combo is absolute perfection! You can top this any way you like. A dollup of Truwhip and crumbled cracker is my preferred topping but I think a layer of vanilla Greek yogurt and sliced banana would also be delish!



Banana Chia Pudding
adapted from: Stupid Easy Paleo

  • 1 small/medium banana
  • 1/4 cup almond coconut milk (your favorite milk will work)
  • 2 tbsp. chia seeds
toppings:
  • Truwhip or organic whipped topping
  • crumbled organic whole wheat or graham crackers (I like Carr Whole Wheat because they are slightly sweet)
Add banana and milk to blender and pulse until smooth and creamy. Add chia and stir to combine. Refrigerate for at least 1 hour. Add toppings. DEVOUR!

Chia Berry Pudding


Good Morning!! Whew!!! Things have been busy around my house!! We are in the process of selling our house and preparing to pack! I am exhausted all ready and all the hard work is just about to begin! This is such a hard process!! Why didn't anyone warn me of that!! I am so sad to leave the house that I have loved for the past 8 years!! That is going to be the hardest part for me. Luckily...I have so much to look forward to this year. I am really trying to focus on the positives!!

This chia pudding recipe has been a great go-to snack for me lately. It would also be a delicious breakfast. Feel free to switch up the fruit and the nuts to use your favorites. 



Chia Berry Pudding

1/2 cup plain Greek yogurt
3 tbsp. milk (any kind will work..I used organic whole milk)
1 tbsp. chia seeds
1 tbsp. pecan halves
1/4 cup blackberries
1/4 cup strawberries (chopped)
2 tsp. honey

Add all ingredients to a container with a lid. Stir well. Cover and refrigerate for at least an hour or overnight.

{Chia Raisin Granola Cereal}

Where are my cold cereal eaters out there??? I used to eat cold cereal for breakfast every day! The only problem is that 95% of cold cereals at your grocery store are VERY processed and loaded with sugar. Your best bet is to make your own! This recipe is not only delicious with some cold milk poured on top but it is AWESOME as a topping for Greek yogurt or even just eaten plain!! My kids snacked on this right out of the jar!!


Kid tested and approved!! :)


Chia Raisin Granola

  • 1/2 cup sunflower seeds
  • 1 cup old fashioned oats
  • 1 cup puffed brown rice (I use this kind)
  • 1/4 cup chia seeds
  • 1/4 cup flax seed meal
  • 1/3 cup organic raisins
  • 1/3 cup coconut oil (melted)
  • 1/3 cup honey
Pre-heat oven to 350 degrees.

Combine all ingredients in a medium bowl and stir until combined well. Spread evenly on baking sheet that has been lined with aluminum foil and sprayed with non-stick spray.

Bake for 30 minutes or until golden brown. 

Remove from oven and allow to cool. Store in airtight container.
