Saute green onions and garlic in large skillet with a couple splashed of veggie broth until green onions are soft. Add the rest of the sauce ingredients and stir. </div><div><br /></div><div>2.) Add veggies and stir to cover with sauce. Bring to a boil. Cover and simmer for 20-30 min until sauce has slightly thickened.</div><div><br /></div><div>3.) Eat warm or save for meal prep for the week! I have about 5 go-to throw together meals I think that is so important to have because let's be honest....it can get pretty chaotic about 5 pm every night. Am I right? Yes....planning and meal prepping is hugely helpful but sometimes that doesn't always happen! These are my go-to, throw-together, in a hurry meals!<br />

1.) Salsa Chicken </h4>

This is such an easy dinner that takes little to no effort. In the morning, throw a couple chicken breasts, 1/2 jar of salsa verde and 1 can of green chiles in the crock pot. Let it cook all day on low. Shred. You can eat this 1 million ways.<br />

If you follow me on Instastories...you know I eat this all the time!! I throw them in the crockpot with <a href="https://www.raos.com/product/marinara-sauce/?gclid=EAIaIQobChMI7Jn_3O3c5AIVipOzCh3ziA9kEAAYASAAEgJgfPD_BwE" target="_blank"><b>Rao's sauce </b></a>and cook for a couple hours on high while I do homework with the kids or I put them in a pot and cook for about 15 minutes on the stove! So easy! I make some brown rice or chickpea pasta for the kiddos!<br />

This is what I eat constantly! I like to buy 2 lbs of boneless, skinless chicken thighs. I season them with <b><a href="https://www.amazon.com/Riega-Organic-Garlic-Himalayan-Seasoning/dp/B07QM35M6Z" target="_blank">Garlic Himalayan Pink Salt</a></b> and bake them at 425 for about an hour. I will eat these all week. They are great re-heated in the air fryer!<br />

A crowd pleaser for sure! I like to make eggs and uncured bacon as my go-to breakfast meal on low carb days. On regular macro days...I LOVE Oatmeal!! So many people have asked me about the<b><a href="https://www.fasterwaycoach.com/#Wholefoodsnewbody" target="_blank"> FASTer Way to Fat Loss</a></b> so I wanted to answer those for you today! YES!! I am a Certified FASTer Way to Fat Loss coach! I went through two rounds of the program earlier this year and fell in love!! I was searching for something to WORK!!! I had done low carb, Keto, Paleo, every Beachbody video that was out but NOTHING was working!! I felt awful. I was eating a very clean diet and working out usually doing yoga 3-4 times a week BUT I had no energy and was gaining weight weekly. What in the world????<br />

Days and weeks of me putting it off....one morning I was sitting on the couch feeling so low on energy and motivation and I did it. I signed up. Prep week started and all of these nutrition strategies felt so foreign to me. Intermittent Fasting???? You mean we don't eat right when we wake up???? Carb cyling??? That sounds like a lot of work. Yes....I dropped 6 lbs. and 12 inches but the most important part was that I felt the best that I had in years. I also changed my whole mindset on food. No longer were foods good or bad. No longer were foods that I loved off limits!! LIFE CHANGING feels like an understatement. I can't keep this to myself ya'll. Ask my family!! I want this for everyone. It is such a healthy way of living.</div>

I made the decision to interview and take the exam to be a Certified FASTer Way to Fat Loss coach. That was a huge step for me being a stay at home Mom. I haven't interviewed in 15 years!! <b>Intermittent Fasting sounds hard? How long do you "not eat?"</b><br />

We follow the 16:8 eating schedule. That means that we fast for 16 hours and eat for 8 hours a day. My typical schedule is 11am-7pm for eating but that is totally up to you what eating window works best.<br />

Yes!! You absolutely can! We can make modifications for you so that your supply doesn't decrease.<br />

I usually break my fast around 10:30-11 am because I finish up my eating the night before around 6:30-7 pm. I slowly drink the coffee and hydrate all morning with a ton of water!!<br />

Dinner was also a really easy go-to meal for me. Breakfast for dinner. My kids beg for this meal! I made a big batch of scrambled eggs and bacon. I served these with a simple salad consisting of greens and more Sir Kensingtons Raspberry Peppercorn dressing! Topped it with some avocado and mini bell peppers stuffed with goat cheese! HA! It has been a huge part of my life. As y'all know....after years of healthy eating and working out consistently something started to change. I started gaining weight....losing energy and relying on coffee to get me through the day constantly. I wasn't blogging through most of this time period because I felt like...."What do I know?" If I can't figure out how to eat healthy correctly...how can I share with people how to be healthy in their own life. I really needed a lot of answers that no one could answer for me. Maybe it was my age, my hormones, my stress level, what I was eating, how I was sleeping?? I needed someone to tell me HOW to feel better.</div>

This is around the time I started seeing some of my favorite bloggers talking about the FASTer way to fat loss. I didn't jump right in initially. No part of me liked fasting for any length of time {lol} and I surely didn't want to have to track my food! I didn't think there was anything wrong with the way I was working out and I didn't really want to do any of it. One day I heard <a href="https://www.instagram.com/nashvilletash/?hl=en" target="_blank">NashvilleTash</a> on Instastories and she was emotional in saying how this program was LIFE CHANGING! Not just the amazing fat loss portion of it but the way that she FELT! That spoke to me. I wanted terribly to FEEL BETTER!!! I didn't care so much about the number on the scale but I wanted to have energy and feel like ME again. I took the leap ya'll and the rest is history. </div>

I fell hard!! I was excited but so intimidated about it all at first. The best part about this was that someone was giving me all the answers to all the questions in my head. No more second guessing myself. I was SO AFRAID to eat so many carbs and calories! I kept repeating in my head..."Trust the process...trust the process!" I listened....I did what my coach Allie told me to do macro wise. She told me little things I needed to tweak. She taught us not only about macros but about fasting, sleep, hormones, gut health, etc. She asked how we were FEELING!! They never expected perfection out of me or anyone. They cared that we were making progress in our life no matter how that progress looked. It's just so different and trusting them...paid off!! </div>

I was SO thrilled with how I felt...how the fat was melting off...I had ENERGY, I was sleeping like a baby but maybe one of the most beneficial results that I had was that I enjoyed so much having this community in my life. These women/men are just like me. They want to do their best and feel their best. I loved being in the facebook group with the other girls. Hearing their wins inspired me. I loved having a coach to ask questions to and to help me navigate tracking macros. I wasn't ready to be done yet so I signed up for another round!!</div>

This is a meal I make at least once or twice a week for dinner! I LOVE <a href="https://www.beetnikfoods.com/" target="_blank">Beetnik</a> Grass fed meatballs. No....this is not sponsored! HA!! I just love them! I get them at Walmart in the freezer section. I love to meal prep these to eat all week but my favorite way to cook them is to throw these frozen in the crockpot and add my favorite marinara. I cook these on high for about an hour or so. I usually make gluten free pasta for the fam but I am more of a zoodles fan. I grab a bag of frozen zoodles and throw those in a skillet with avocado oil. Just let it cook until all of the water is absorbed and they start to brown a little. I like to add some garlic powder, salt and a little Parmesan cheese to finish these off. Hands on time for this meal is 10-15 minutes and everyone is happy!<br />

I get a pack of organic boneless skinless chicken thighs. Add those to a casserole dish. Drizzle with extra virgin olive oil and squeeze over some fresh lemon juice. Add a chopped onion all around the chicken pieces and sprinkle the whole thing with pink salt and pepper. Bake this at 400 for about 45 min to an hour. I like my chicken thighs VERY done. The crispier the better. I even broil it at the very end to get these even crispier. Pop a bag of steamer rice and steamer broccoli in the microwave 10 minutes or so before the chicken is done. Add the chicken and some of the extra sauce to the top of the rice and broccoli and it's delicious!! </div>

I can't stop...won't stop making breakfast for dinner at least once a week for my family. Who doesn't love breakfast foods?? I usually bake my uncured bacon at 400 degrees for about 20 minutes or until crispy. While this is baking...make a big skillet full of scrambled eggs for the kids and fried eggs for me. Chop up or wash any fruit you have in the fridge. I like to throw in some spinach and avocado to give it a healthy boost. EASY!!!!</div>

This is my favorite low carb dinner. I buy grass fed burgers from Walmart. I add these to a cast iron skillet with some avocado oil. Cook to desired doneness and top with a piece of dairy free cheese when they are almost done. Add some spring mix to a bowl. Top with cheeseburger. Diced up tomatoes, sliced pickles,and uncured bacon bits are my favorite toppings. I use <a href="https://www.tessemaes.com/products/organic-creamy-ranch" target="_blank">Tessamaes Ranch dressing </a>or <a href="https://bluetopbrand.com/pages/sauces" target="_blank">Blue Top brand Street sauce </a>for my dressing on these burger salads. SO good. My kids like the cheese burgers chopped up with ketchup on the side and usually a side salad with ranch. </div>

It has been SO long since I have written a blog post but I was thinking about starting to blog a bit more again? I have felt really motivated and excited to share what I have been doing lately because I guess for the first time in a while....what I am doing is WORKING!! By working....I mean...I feel great, feel energized, feel like I have my health under control, feel like I have support and have lost a bunch of lbs. and inches. I have been riding the struggle bus for years! Not that I haven't been eating healthy and working out....because I have. Something has been missing though. No matter how healthy I ate....I was gaining weight and feeling lower and lower on energy. Probably a hormonal/adrenal thing...who knows? I didn't know how to fix it. I am a research kind of girl. I read everything....google everything...try everything. I just wanted to FEEL good again. Like I did back in the day when I switched to whole foods and starting being more active. I just couldn't get it right.<br />

Fast forward a few years of struggling to 2019. They don't care. They focus on your measurements, pictures and how your clothes fit. For the first time....I don't care about the scale!!! HUGE VICTORY for me!!<br />

This program focuses on Intermittent Fasting paired with carb cycling and effective workouts. If intermittent fasting sounds scary to you...don't be scared. Start slow with a 12 hour fast (at night) while you are sleeping for the majority of the time and slowly work you way to a 16 hour fast and an 8 hour eating period. You will learn more about this during prep week so you will definitely learn about the benefits and tips and tricks to make this easier. Most people think this is super easy and love the fasting portion. Yes....there are meal plans, meal ideas, snack ideas. You will get A TON of info. More than I have ever received with any program in the past.<br />

The workouts aren't required if that is not your thing but they are highly recommended to maximize your results. They aren't super long. I would say 20-30 min and there are beginner/gym/home options. VERY doable no matter what your fitness experience is. I mean...I work out in my bedroom with a 5 and 10 lb. set of dumbbells. No crazy equipment that you need to buy if you don't have a gym membership.<br />

Yes....and I used to hate tracking food! LOL! I thought I would hate it and it would make me anxious but actually it does the exact opposite. I love focusing on hitting my macros because I know that I will feel my best if I do. This is not calorie counting. They don't want to limit your calories...they want to make sure you are FUELING your body correctly!! I was under eating for years and had no clue. I have been forced to eat CARBS for the first time in my life and it feels so nice to include ALL food groups into my diet again!!<br />

Just wanted to take a minute to give you all an update on ME! I have received so many sweet emails asking where I've been and if I will start blogging again so I wanted to answer a few of your questions.<br />

First off.....I have been SO busy you guys. I know you get it. I know you all are too! These crazy three children of mine keep me on my toes without much time to myself to think....let alone blog.<br />
<br />
Second....Am I still eating healthy...working out? Yes....I still eat healthy. Same ol' foods I have eaten for the last 5-6 years. Like I have said before....It is my lifestyle....not a diet. Working out has been on and off this year. I have..HAVE to get back to it. I feel so much better when I do. I have a good 5-10 lbs. from too much summer fun that I need to lose!<br />
<br />
third...Will I blog consistently again? No clue. I just don't know. I don't want to half way do anything in life so if I can't give it my all...I don't want to do it. So maybe? My kids are getting older and will soon all be in school so at that time, I would love to get back to it. I also would love to start health coaching at some point in my life so who knows???<br />

Anyways....Thank you all for such sweet emails. Makes a girl feel special. I miss blogging...for sure. I still make a ton of my old recipes and the majority of my "What I ate Wednesdays" are actually exactly what I still eat! A ton of good resources on the ol' blog so enjoy.<br />

I have been a clean eater now for 3 years. Loved every second of it. Lost a good amount of weight and have been feeling great....<br />

Who knows, I don't see me giving up dairy and grains for life but I do think it is worth a try omitting them to see how my body feels when I add them back in. NOW...let me just say this....I am NOT DOING STRICT Paleo. I don't believe anything in life....especially your food....should be strict!! This is the way I interpret Paleo. I am learning as I go and excited to open my mind to new things!!<br />

I am pretty sure that you guys know by now that I LOOOVE peanut butter. Right? I put it on everything. It is crazy to me that I haven't made a peanut butter "bread" recipe yet?<br />

I love to make oat breads during <b><a href="http://wholefoodsnewbody.blogspot.com/2015/09/meal-prep-my-5-must-prep-items-for-week.html" target="_blank">my meal prep</a></b>. This is so great on crazy mornings. All you have to do is grab it out of the fridge (if you like it cold), slice it up and breakfast is served!<br />

It is a toss up for me....I love the <b><a href="http://wholefoodsnewbody.blogspot.com/2013/06/clean-eating-strawberry-banana-bread.html" target="_blank">Strawberry banana</a></b> and <b><a href="http://wholefoodsnewbody.blogspot.com/2013/09/clean-eating-pumpkin-bread.html" target="_blank">Pumpkin bread </a> SO MUCH </b>but peanut butter is definitely close to the top. So good!<br />

<b><u>Peanut Butter Blender Oat bread</u></b><br />

<li>2 cups old fashioned oats</li>
<li>2 medium ripe bananas + 1 banana for sliced topping </li>
<li>1 cup plain Greek yogurt</li>
<li>1/2 cup natural chunky peanut butter (the drippy kind with 1 ingredient)</li>
<li>1/3 cup honey</li>
<li>1 tsp. baking powder</li>
<li>1 tsp. baking soda</li>
<li>2 eggs</li>
</ul>

Add all ingredients (except extra banana for topping) to blender. Blend until smooth and combined. Add to 9x5 loaf pan that has been sprayed with non-stick spray. Add the extra banana in slices to the top.</div>

Bake at 400 degrees for 40-45 minutes or until a toothpick inserted comes out clean. If the top starts to get too brown....just lay a piece of aluminum foil over the top until bread is done.</div>

Allow to cool in pan for 10 minutes before removing from pan.</div>

Store in air-tight container. We love our oat breads cold straight out of the fridge but it is delicious cold or room temp. :)<br />

<li>3 scoops Vanilla protein powder (I used Ryno Power Whey French Vanilla protein powder)</li>
<li>1/2 cup unsweetened coconut flakes + extra for rolling</li>
<li>2 tbsp. coconut oil</li>
<li>3 tbsp. coconut milk (full fat, the one in the can)</li>
<li>1/4 cup dried pineapple (optional)</li>
</ul>

Pulse in food processor until it is all mixed and looking "dough" like. Roll into balls using your tablespoon to measure. Sprinkle some extra coconut flakes on a plate and roll each ball in them to coat.<br />

Store in an airtight container in the fridge. Enjoy straight out of the fridge or allow to sit at room temp a few minutes to soften.<br />

He doesn't like to put much time into breakfast....he is more of a grab and go kind of guy. I thought adding protein powder to the muffins would be perfect to eat on the way to work after his morning workout. These would really be great any time of the day. They are super tasty and he inhaled 6 of these after I made them! They are that good!<br>

I am super picky about protein powder. I look for ones with natural sweeteners, no artificial flavors and non-GMO. Oh and tasting good is definitely on my list! I am so glad to be back on track with my eating! I feel like I am finally getting back to my normal routine. I am on day 11 of the 30 Days of<b><a href="http://yogawithadriene.com/yoga-camp/" target="_blank"> Yoga Camp</a></b> and I am so sore!! There is nothing better than getting in a great yoga session and waking up the next day feeling the burn!! I am so obsessed with yoga. I love having a "workout" that I actually don't hate and doesn't feel like torture. I hope you all can find a fitness program that you absolutely love and enjoy doing. Exercise shouldn't be miserable. It should make you feel great! </div>

<li>2 medium bananas (diced in coins)</li>
<li>2 cups old fashioned oats</li>
<li>1 tsp. cinnamon</li>
<li>1 tsp. baking powder</li>
<li>2 cups unsweetened vanilla almond milk</li>
<li>3 eggs</li>
<li>1/4 cup maple syrup</li>
<li>1 tsp. Vanilla extract </li>
<li>1 cup frozen peach slices (or fresh) **Feel free to leave the slices whole or chop them up to bite size pieces</li>
<li>2 tbsp. organic butter</li>
<li>sprinkle of organic cane sugar</li>

Pre-heat oven to 350 degrees.</div>

In an 8x8 baking dish sprayed with non-stick spray, add bananas in a single layer. Mix oats, cinnamon and baking powder in a medium bowl. Sprinkle oat mixture over bananas. Combine milk, eggs, syrup and vanilla in a bowl and stir well. Pour over oats. Add sliced peaches to top. Melt butter. Drizzle over the top of oatmeal mixture. Sprinkle the top with sugar. </div>

I have still been doing yoga 3-4 times a week. It is true love really. I don't crave any other exercise. This makes me feel great and I enjoy every workout. Finally completed the construction in my living room. WOO HOO! We still have a couple more tiny things to do but for now we are calling it good! Happy Monday! Did ya'll have a great Thanksgiving?? I sure did! The food....AMAZING! A great day spent with family! Now I am in full on Christmas mode. Most of my shopping DONE and I finally finished my decorating! WOO HOO!! Now....just to enjoy the season! My favorite time of year for sure!<br />

I haven't meal planned in a while so I thought it would be a good idea to help get me back on track after the holiday.<br />

Let me first just say..... I follow the 90/10 rule and holidays always fall in my 10% wiggle room but I am just like everyone else. I don't want to get on the scales and gain all of the weight I worked so hard to get off!! I have a few tips that I use just to keep a check on myself because it is very easy to go binge crazy shoving your face full of bread and chocolate. Or....is that just me?<br />

<b>Tip #1: Always....Always eat something at home before you attend any Holiday party or festivity</b><br />

<b><br /></b>I have said it before and I will say it again....don't go anywhere hungry! If you leave your house hungry...chances of you eating something not so great or eating WAY TOO MUCH are high. I always bring a bottle of water with me anywhere I go so I can drink up on the way to the party/event. That is a great way to fill you up and beat that thirst that can sometimes show itself as hunger. I also usually eat an apple/almonds or a yogurt before I walk out the door. You can ask my husband....I don't care if I am running late or not....I always eat something or grab an apple for the road. I get hungry every few hours and I want to be prepared!! Something like a Larabar is really handy to eat on the way. If you aren't starving by the time you arrive...you are less likely to binge.<br />

<b>Tip #2: Bring a healthy appetizer/dish/dessert with you!</b><br />

I love bringing fruit or veggie trays to any get-together. Wanna know why?? Because I like fruits and veggies and I know that I will have some healthy stuff to snack on instead of chips and dip! Bring a healthy dessert but don't tell people that it is healthy! Just shock them all with a delicious treat that you won't feel guilty about later. It is always nice to know that wherever you are going....you will have healthier options to eat that you know you will enjoy.<br />

Ya'll my entire family is full of ridiculously good cooks. I am not kidding. It is a blessing and a curse! I know the handful of dishes that are a must. I do not deprive myself from the foods that I love and that have great tradition/memories wrapped up in them. My grandma makes THA BEST giblet gravy. Am I going to eat some....YES!!! Life is not about depriving yourself to be skinny! Life is about enjoying times with friends and family so please....eat some of your faves... just watch the portion size. I don't douse my whole plate in gravy....I use a little so that I can enjoy it and move on. I just won't put things on my plate that aren't either good for me....or one of my absolute faves!<br />

Try to be mindful of when you have had enough. Sometimes you get busy chatting and mingling and you aren't paying attention to your stomach. Just try to have a seat, take your time, enjoy and then put your plate away when you are done! There will be dessert and we all know that we can't skip that part so just try to enjoy the company and stay mindful of when you are full.<br />

These holidays are some of the best days of the year....don't spend it worrying about your weight. Regardless of how much you eat or what you eat....it will be fine! Don't let it discourage you from your goals. If you wake up the next day and feel guilty about the food you enjoyed...STOP! No guilt! Just get motivated to start the next day doing your best!<br />
