{Banana Chia Pudding}

This may be my favorite new snack/dessert. It is beyond yummy and so good for you! I love all things banana and chia so the combo is absolute perfection! You can top this any way you like. A dollup of Truwhip and crumbled cracker is my preferred topping but I think a layer of vanilla Greek yogurt and sliced banana would also be delish!

Banana Chia Pudding
adapted from: Stupid Easy Paleo

  • 1 small/medium banana
  • 1/4 cup almond coconut milk (your favorite milk will work)
  • 2 tbsp. chia seeds
  • Truwhip or organic whipped topping
  • crumbled organic whole wheat or graham crackers (I like Carr Whole Wheat because they are slightly sweet)
Add banana and milk to blender and pulse until smooth and creamy. Add chia and stir to combine. Refrigerate for at least 1 hour. Add toppings. DEVOUR!
