{Clean Eating Strawberry Banana Bread}

I absolutely LOVE Banana Bread!! There is nothing better than a slice of banana bread and a cup of coffee! YUMM! Add strawberries to that and it seems to add a little summertime to the my favorite fall treat! This bread can be eaten cold or warm. Either way it is absolutely delicious! This bread is crispy around the edges and sweet and gooey in the middle! What a delicious breakfast, snack or dessert!! You should actually feel good about eating this!

YUMM!!! Want the recipe???

Clean Eating Strawberry Banana Bread

  • 2 cups oat flour (place oats in processor and pulse until flour consistency)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1/2 cup honey
  • 2 large bananas (mashed)
  • 2 eggs
  • 1/2 cup plain non-fat Greek yogurt
  • 1 tsp. pure vanilla extract
  • 1 cup strawberries (diced)
Pre-heat oven to 375 degrees.

Add all ingredients to medium bowl and mix until thoroughly combined. Once combined, pour into loaf pan that is sprayed with coconut oil/olive oil spray.

**I store mine in the refrigerator. Great served cold or warmed in microwave**

  7. Do you think this would work if I subbed peaches for strawberries? I have a ton of peaches that I need to use up!

    1. So glad you liked it!! I don't know the nutritional info because I don't really count calories. I guess it would depend on how many slices you get out of a loaf too. :)

    1. Do you taste the Greek yogurt once it's done? I don't like the taste of yogurt at all. Can't wait to bake this and the pumpkin bread! I LOVE sweets!

    2. You can't taste the yogurt at all....it just makes the bread moist!

  11. Hi! I really love all your recipes!! A question: Can I replace honey with stevia? My grandma is diabetic and I wanna do this for her. Here in Argentina you have fans haha... and we send you a hug! Good luck!

    1. You can definitely use Stevia to sweeten but you may need to add a little more Greek yogurt for liquid. Let me know how it turns out! :)

  13. It's a fairly thick batter but if it seems too thick...you could add a little more yogurt or applesauce. Hope that helps!!

  17. I just tried it but I did not use the strawberries and I didn't have enough honey so I used 1/4 cup of honey and 1/4 cup coconut sugar and it came out perfect. My batter wasn't super thick so not sure why but it turned out amazing. So good that I used this as a base for lemon blueberry muffins. I used blueberries and two tbs of lemon juice and one tbs of lemon zest about one medium lemon in total. Came out perfect now that batter was thicker lol probably because I used half oat flour and half white flour (ran out of oats lol)

  18. I made this bread exactly in recipe but I think the inside is too gooey. Doesn't seem done enough. What did I do wrong? I'm in Florida so its humid here.

    1. Hey Ronnie! Every oven is different and humidity plays a part. These oat breads can vary in cooking temps. I always use a toothpick to check to see if it is all the way cooked after the baking time...if not just pop it back in the oven and bake for 5-10 minutes more. I have even cut into some...found them gooey and put it back in for another 10 minutes or so. Let these sit for at least 10 minutes before removing from loaf pan too. I find that helps! :)

    2. Thanks soo much. Will try this again but try convection oven version. That always does my beer bread perfectly every time. I just loved the ingredient combo. It's soo healthy... Worth another try!
