Clean Eating Strawberry Banana Bread
- 2 cups oat flour (place oats in processor and pulse until flour consistency)
- 1 1/2 tsp. baking powder
- 1/2 tsp. sea salt
- 1/2 cup honey
- 2 large bananas (mashed)
- 2 eggs
- 1/2 cup plain non-fat Greek yogurt
- 1 tsp. pure vanilla extract
- 1 cup strawberries (diced)
Pre-heat oven to 375 degrees.
Add all ingredients to medium bowl and mix until thoroughly combined. Once combined, pour into loaf pan that is sprayed with coconut oil/olive oil spray.
Bake for 50 minutes or until toothpick comes out clean. Let cool for 10 minutes before slicing.
**I store mine in the refrigerator. Great served cold or warmed in microwave**

ReplyDeleteYou could try brown rice syrup or organic maple syrup. I am not sure of the results so you will have to let me know!

ReplyDeleteSo glad you liked it!! I don't know the nutritional info because I don't really count calories. I guess it would depend on how many slices you get out of a loaf too. :)

ReplyDeleteYou can definitely use Stevia to sweeten but you may need to add a little more Greek yogurt for liquid. Let me know how it turns out! :)

ReplyDeleteIt's a fairly thick batter but if it seems too thick...you could add a little more yogurt or applesauce. Hope that helps!!

DeleteI just tried it but I did not use the strawberries and I didn't have enough honey so I used 1/4 cup of honey and 1/4 cup coconut sugar and it came out perfect. My batter wasn't super thick so not sure why but it turned out amazing. So good that I used this as a base for lemon blueberry muffins. I used blueberries and two tbs of lemon juice and one tbs of lemon zest about one medium lemon in total. Came out perfect now that batter was thicker lol probably because I used half oat flour and half white flour (ran out of oats lol)

ReplyDeleteHey Ronnie! Every oven is different and humidity plays a part. These oat breads can vary in cooking temps. I always use a toothpick to check to see if it is all the way cooked after the baking time...if not just pop it back in the oven and bake for 5-10 minutes more. I have even cut into some...found them gooey and put it back in for another 10 minutes or so. Let these sit for at least 10 minutes before removing from loaf pan too. I find that helps! :)
