{Holiday Pomegranate Apple Salad}

Everyone needs a really simple, pretty salad to take to Holiday parties. I mean...it doesn't have to be fancy but it sure is pretty...right? This is really the perfect salad to serve with an easy dinner or to take to your holiday parties. Everyone loves it!

I am LOVING Harris Teeters Organic Orange Poppy Seed dressing. I usually make my own dressing....which is always great...but sometimes I just don't have the time so I find the best organic dressing and use it in a pinch. Feel free to make your own poppy seed dressing or use your "cleanest" store bought option.




Holiday Pomegranate and Apple Salad
  • 1 head of green leaf lettuce (chopped)
  • 1 small Gala apple (sliced thinly)
  • 1/2 cup dried cranberries
  • 1/2 cup pomegranate seeds
  • 1/2 medium red onion (sliced thinly)
  • 2 tbsp. sunflower seeds (walnuts would also be yummy)
  • drizzle of organic poppy seed dressing (or your favorite homemade dressing)
Arrange lettuce in a large bowl and top with apple, pomegranate, onion and sunflower seeds. Divide into 4-5 large bowls and drizzle with your favorite dressing.

Crock Pot Apple & Sausage Dressing}

I am pretty sure you can't have Thanksgiving without dressing or stuffing! Am I right?? My Grandmother's dressing is out of this world!! I have no idea what she puts in it but it is absolutely delicious and perfect every year! This Crock pot dressing is SO simple but AWESOME!! My husband was COMPLETELY shocked at how good this was!! We both adored it! Take this to your Thanksgiving get-together....I promise you everyone will love it!


Crock Pot Apple and Sausage Dressing
  • 8 oz. Chicken Apple Maple Breakfast Sausage (chopped into small pieces) **I used this brand
  • 2 cups onions (chopped)
  • 2 cups apples (peeled and chopped) **I used Gala
  • 1 tsp. extra virgin olive oil
  • 1 tbsp. Herbs de Provence
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 7 slices Ezekiel bread (toasted and chopped into cubes)
  • 14.5 oz. can organic chicken broth **or msg. free/low sodium
Add sausage, onions, apples and olive oil to a medium sized pan and cook on medium to medium-high heat until onions are translucent. Add spices, salt and pepper. Stir to combine. Add to Crock Pot that has been sprayed with olive oil spray.  Stir in bread and chicken broth. 

Cover and cook on low for an hour and a half.

{Spiced Apple Bread}

This bread is OH SO GOOD! It would be perfect for Thanksgiving morning (or any morning actually), a great snack, or a super sweet gift! These breads don't last long in my house! They are just way too easy and delicious!



Spiced Apple Bread
  • 1 1/2 cup old fashioned oats (processed into flour using a food processor or 1 cup oat flour)
  • 2 cups chopped apples (I used Gala)
  • 1 cup unsweetened applesauce
  • 1/2 cup plain Greek Yogurt
  • 2 eggs
  • 1 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 cup honey
  • 1 1/2 tsp. baking powder
  • pinch salt
Pre-heat oven to 375 degrees.

Add all ingredients to a medium bowl and stir to combine. Add to a loaf pan that has been sprayed with non-stick spray. *Sprinkle the top with some extra oats to make it pretty!

Bake for 65-75 minutes or until toothpick inserted comes out clean and bread is cooked through.

{Pear and Apple Crock Pot Pork}

I am a HUGE fan of my Crock Pot. It is so nice to throw everything in the crock pot during nap time and not having to worry with dinner again for the rest of the day! It is also great for those of you that work 8-10 hours a day and don't want to have to deal with cooking dinner when you get home. This is a super simple way to cook pork chops! I love the sweet/tart apples and pear mixed with the pork. I served this over a baked sweet potato that I removed the skin, mashed and sprinkled with cinnamon! DELISH!


Pear and Apple Crock Pot Pork

  • 4 boneless pork chops (about 1.5 lb.)
  • 1 onion (chopped)
  • 2 small apples (chopped) **I used Gala
  • 1 Bartlett pear (chopped)
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 tbsp. honey
  • salt and pepper
  • 1/2 cup unsweetened applesauce
Place onion, apple, and pear in crock pot. Sprinkle spices over mixture.


Drizzle honey over the apple mixture. Season pork chops with salt and pepper and place in crock pot. Pour applesauce on top of it all and cover.

Cook on low for 6-8 hours. 

It is that simple!!! This makes great leftovers also!!
