{Carrot Cake Oatmeal Muffins}

Muffin obsessed?? Okay....I am! To my defense, I have to make muffins every couple of days for my husband and 16 month old. It is fast enough for my hubby to grab-and-go on his way out the door. My 16 month old has very little patience in the mornings and these are perfect to grab out of the refrigerator and put on his high chair tray! He eats two every morning! It feels good knowing that he is eating a healthy homemade breakfast!

Carrots are ridiculously good for you and I very rarely eat them but grated in this muffin, you barely know they are there!! This is one easy way to get carrots in my kids too! Plus they remind me of carrot cake.....one of my favorite desserts! SCORE!!


Carrot Cake Oatmeal Muffins

Makes 15 muffins

  • 2 medium carrots (grated)
  • 2 medium bananas (mashed)
  • 3 cups oats (any kind will do)
  • 1 cup milk (I used unsweetened vanilla almond milk)
  • 2 eggs
  • 1/4 cup organic maple syrup
  • 1 tsp. cinnamon
  • 1 tbsp. baking powder
  • 1/2 tsp. allspice
  • 1/2 tsp. nutmeg
Combine all ingredients in a medium bowl. Mix thoroughly. Spoon into a muffin tin sprayed with olive oil/coconut oil spray or lined with parchment baking cups. 

Bake at 350 degrees for 20-25 minutes.

Store in refrigerator in airtight container.

    1. I don't think they taste overly banana but you could always substitute with 1 cup of applesauce instead. :)

  2. How do these freeze? There is only 2 of us in the house and I don't want to eat the same thing all week so I was thinking of making a few flavours and freezing them so that I can have a variety. Sounds like they go so quick your house don't know if have had the chance to freeze them, but let me know!

    1. I actually don't count calories or anything really but I pasted it in my fitness pal and these come up to about 80 calories a muffin. Hope that helps! :)

  5. Could baby food carrots be used in place of fresh possibly? I sometimes keep that sort of thing around just for baking (carrots, bananas, sweet potato)
