Apple Cinnamon Oatmeal Muffins

Muffins again?? I know, I know! They are such a big hit in my house! This is the one breakfast that my entire family will eat. I will have to say this one tops the list for me! My husband sent me a message on his way to work telling me, and I quote: "Those muffins are the bomb!" The best part about them is that they are so easy to make and they re-heat in 30 seconds. You can't make a more nutritious breakfast in 30 seconds!



Apple Cinnamon Oatmeal Muffins

Makes 15 muffins

  • 3 cups Quick Oats (can use old fashioned or gluten free oats as well)**Grind oats in food processor for a smoother texture if desired**
  • 1 cup Vanilla Unsweetened Almond Milk  (any milk will work)
  • 2 organic eggs
  • 1/4 cup organic maple syrup (a little more if you like your muffins sweet)
  • 2 tsp. cinnamon
  • 1 tbsp. baking powder
  • 1 cup grated apple (I used 2 small Gala apples-I grated with peel on--add all the apple and the juice)
Pre-heat oven to 350 degrees.

Mix all ingredients until combined. Spoon into 15 baking cups or muffin tin sprayed with olive oil/coconut oil spray.  Bake for 20-25 minutes or until a toothpick comes out clean.

Once cool, store in airtight container.

  3. Just tried these, they are cooling as I type :)! Haven't tasted them yet....I did grind my oatmeal...the tops of my muffins look different than the tops of your picture...do you think its because it wasn't quite as chunky because I ground the oatmeal?

    1. Yes! I didn't grind my oats. Some people like a smooth textured muffin and some like a more rustic kind of muffin. I like both! Hope they turned out well!

    3. Did you insert a toothpick in the center of one and did it come out clean? If they're still gooey...pop them back in the oven and check again in a few minutes! :)
