Blueberry Banana Oatmeal Muffin

Got 30 minutes???? Spend 30 minutes making these muffins and have breakfast for the whole week! Sounds too easy..Right??? I kind of hate to admit it but I am not a huge fan of hot oatmeal. I have tried it so many ways and I just don't love it! Oatmeal muffins, overnight oats and raw oat cereal are my go-to breakfasts these days. These oatmeal muffins are a family favorite. We are lucky if they last 24 hours in my house. My one year old can eat 3 for breakfast! The best part about them is that you can make them so many different ways and adapt them to suit your taste! Each muffin is only 99 calories so go ahead and grab 2 or 3 on your way out the door! :)



Blueberry Banana Oatmeal Muffins

adapted from Green Lite Bites

  • 3 mashed ripe bananas
  • 1 cup vanilla unsweetened almond milk (or organic skim)
  • 2 eggs
  • 1 tbsp. baking powder
  • 1/2 cup applesauce
  • 1/2 tbsp. cinnamon
  • 3 cups Quick Oats (can use Old Fashioned Oats) **Grind oats in food processor for a smoother texture if desired**
  • 1 tsp. vanilla extract
  • 1/3 cup fresh blueberries
Preheat oven to 375 degrees. Mix all ingredients in a large bowl. Spray a muffin tin or baking cups with olive oil spray.  Divide batter into 15 cups. Bake for 25-30 minutes minutes until slightly brown on top. Let cool completely and place in airtight container or storage bag in refrigerator. 
**I re-heat in the microwave for 30 seconds when ready to eat! If you like your muffins a little bit sweeter...feel free to add a couple packets of stevia or a couple tablespoons of honey or maple syrup.  These are also really good with dark chocolate chips in place of blueberries although that does increase the calorie count. If using dark chocolate chips...I would use 1/4 cup. You could mix in raisins/dried cherries/walnuts/diced strawberries/diced peaches instead of blueberries....the possibilities are endless!

  1. just found your blog! This is a great resource for a newbie clean eater :) I have a question. My youngest has a nut allergy. Have you ever tried coconut milk or rice milks in place of the almond milk? Or I could just use regular milk too, I suppose. Just wondered if you've ever cooked with those substitutions. Thanks, amy

    1. I have always used almond milk but I am sure any kind of milk will work! You may have to add a little honey if they aren't sweet enough on your first round! :)

  2. What about using steel cut oats vs quick oats? I'm trying to cut out processed foods.
