Happy Monday Everyone!!
I hope you all had a great weekend. Mine was so busy. The weekend flew by....but doesn't it always. I am getting back in the swing of things and starting to plan out my meals again. Did you read my post last week about how I meal plan? It makes meal planning so fast and easy. Let's be honest....if it isn't easy.... there is a good chance I won't do it! HA!
This is my plan for the week:
Monday: Pistachio Chicken Salad Sandwich (made with plain Greek yogurt instead of mayo) with Roasted Green Beans
Tuesday: Sweet Potato Burgers (Bunless) with Dijon Pear Kale Salad
Wednesday: Slow Cooker Chipotle Pork with Pineapple Slaw (1/4 cup mayo and 1/4 cup plain Greek yogurt for slaw)
Thursday: Leftovers
Friday: Loaded Sweet Potato Nachos
Saturday: Take Out
Sunday: Super Bowl (Out for Dinner)
