{Quinoa Porridge}

If you are looking to switch things up from your usual oatmeal in the morning...I have the perfect dish for you!! Quinoa is awesome for you so if you haven't tried it yet....TRY IT!! I actually make a large batch of quinoa in my rice maker on Sundays so that I will have breakfast all week!! It is kind of ridiculously easy! It doesn't take quite as long as my favorite steel cut oatmeal so this cooks in just enough time for me to make breakfast for my kids. Perfection!

Quinoa Porridge

  • 1/2 cup cooked quinoa
  • 1 cup unsweetened vanilla almond milk **or any milk you like
  • 1/2 banana (mashed)
  • 1/2 tsp. vanilla extract
  • dash cinnamon
  • 1 tbsp. chia seeds
Combine all ingredients in a small sauce pan and bring to a boil. Turn down to medium low heat. Cook until porridge is thick and creamy (about 10 minutes.)

Top as desired. I love to add organic raisins and chopped walnuts to mine! :)

***I add 1 cup rinsed quinoa and 2 cups of water to my rice cooker to make enough quinoa to last me all week! If you don't have a rice cooker....follow the instructions on the back of the package.

  2. If you cook the quinoa in your rice cooker, do you add the milk, etc after you heat up a serving? I've never thought of using quinoa as porridge; will definitely try this.

    1. I add the cooked quinoa to the pot with all of the other ingredients and let them cook together. You can cook the quinoa using whatever method you would like following the cooking instructions on the package. Hope you love it!! :)
