Well hello {Meal Planning Monday}...boy...have I missed you! Last week was so awesome but I am really ready to get back to my meal planning, healthy eating and exercise! Exercise has been really hard for me the past month and although I must admit that I don't plan on putting too much pressure on myself until after the holidays...I do want to start adding in some workouts when I can between now and then! I am much better at focusing on my food than I am sticking with a super intense workout regimen this time of year.
So what do I do after a holiday and weekend of splurges??? I get back on it! I start with planning out my meals, packing my fridge with healthy options and focusing on getting enough water. I know that I will feel so much better this week!
Here is my plan for dinner this week:
Monday: Sweet Potato Shepherds Pie **I made this a few weeks ago and the whole family loved it!
Tuesday: Barbacoa Pork with Cilantro Lime Brown Rice **The recipe calls for beef roast but I am using pork instead
Wednesday: Mexican Chicken and Quinoa Casserole
Thursday: Leftovers
Friday: Breakfast for dinner **I will either make egg omelets and nitrate free bacon or pancakes using Bobs Red Mill 10 grain Pancake Mix.
Saturday: Out for dinner
Sunday: Spaghetti Pie
