{Clean Eating Peach Cobbler}

Happy Memorial Day Everyone!!! It is a gorgeous day and I can't wait to get some burgers on the grill!! YUMM!! Still trying to figure out what to take to your BBQ?? Check out this post for some ideas!

I grew up eating cobblers all the time! Fresh fruit with lots of butter and sugar....to die for!! My Grandmother makes THE best blackberry cobbler you will ever taste! I crave cobblers!! Love them all! I have a hard time choosing between peach or blackberry as my favorite kind of cobbler.



 The recipe that I have for peach cobbler calls for margarine, sugar and all purpose flour. Those are three things I am working very hard to eliminate from my diet BUT I still want COBBLER!!!

This {Clean Eating Peach Cobbler} is absolutely delicious and so healthy you could eat it for breakfast. Okay so ice cream for breakfast may be a stretch but I won't tell!! :)  I made these in mason jars just because I like to eat/drink everything out of a jar these days but feel free to use ramekins or a small dish!



Clean Eating Peach Cobbler

{serves 4}

  • 1 cup old fashioned oats (made into oat flour by grinding in food processor or use oat flour)
  • 2 tsp. baking powder
  • 1 egg
  • 1/4 cup honey
  • 1/3 cup milk ( I used unsweetened almond milk but any kind will work)
  • 2 cups fresh or frozen peaches (Chop fresh peaches into small slices)
  • organic vanilla ice cream for topping
Pre-heat oven to 350 degrees. Spray mason jars or 8x8 glass dish with coconut oil or olive oil spray. Mix oat flour, baking powder, egg, honey and milk together in small bowl and set aside. Place 1/2 cup frozen peaches in each mason jar or place all peaches in the bottom of your dish. Divide batter evenly between the four jars or pour on top of peaches in your 8x8 dish.. 

Bake for 35-40 minutes until golden brown. Allow to cool slightly. Top with organic vanilla ice cream!

**My husband loves his peach cobbler cold so it is even really good the next day!

  4. Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. peach cobbler recipe
