Good Morning Egg White Scramble
- 1/4 medium onion diced
- 3/4 cup baby spinach
- 4 egg whites
- 2 pieces of Applegate Good Morning uncured bacon (cooked until crispy)
- 1/3 cup organic shredded cheese
- salt and pepper to taste
In a skillet, saute onion in a little bit of olive oil cooking spray. After softened, add spinach just until it wilts. Add egg whites and a small amount of salt and pepper. Use spatula to scramble mixture around in the pan. Once the egg is almost cooked, add in crispy bacon and cheese.

{I like to serve mine with a piece of toasted Ezekiel bread, 1 tsp. almond butter and a dash of cinnamon!}
