On to {What I Ate Wednesday}
Breakfast: I made my Peanut Butter Cup Protein Shake with a cup of coffee on the side.
Lunch: This was leftovers from Monday night. I made this Broccoli Cheddar Brown Rice casserole and it was a huge hit with my whole family. I omitted the carrots and panko and used brown rice flour to thicken the sauce and it was delish! Just as delicious as leftovers for lunch!
Snacks: Plain Greek yogurt with blueberries and honey, fresh cherries and unsalted almonds.
Dinner: Pork tenderloin that I sliced thinly and cooked in olive oil and Greek seasoning with peppers and onions. I served this with brown rice.
Dessert: Not pictured because I was too tired and lazy at this point! I had a little organic coffee ice cream with dark chocolate chips. My appetite is kind of crazy. Half the day I barely think about food and at night I am ravenous!
