Happy Wednesday!! I slept SO good last night. For the first time in a very long time I don't remember waking up in the middle of the night....no tossing and turning and no potty breaks! Woo hoo! I feel great!!!
I thought it would be fun to link up with Jenn at Peas and Crayons for What I Ate Wednesday. I always love seeing what others are eating and getting ideas for some new healthy meals and snacks!
Breakfast: I whipped up some Trader Joe's Steel Cut oatmeal. It is frozen and sweetened with a little brown sugar and maple syrup. I love oatmeal in the mornings and this is steel cut oatmeal in 3 minutes! Love that!! I also added some chunky all natural peanut butter, raisins and a little honey. Delish!
Snack: Plain Greek yogurt with strawberries, bananas and coconut with a drizzle of honey to sweeten.
Lunch: My usual these days....veggie wrap with black beans, spring mix, roasted red peppers, hummus, cherry tomatoes and pickles on a whole grain wrap.
Dinnner: I made a version of my Chicken stir fry with a little scrambled egg and liquid aminos.
Bedtime snack: These days I get so hungry at night and even wake up with my stomach growling. To prevent that I have been having a little snack at night....just to hold me over! Last night I had Multi-grain Puffins with strawberries and organic whole milk. This may be my new favorite bedtime snack!
