{Crock pot Pot Roast}

Good Morning!!! I can NOT believe that it is Monday already!! This weekend was SO busy and last week we were snowed in so I am hoping that this week...everything will get back to normal. I made tha BEST dinner last night. I wasn't really planning on posting it but it was SO GOOD that I knew I had to share!!

I don't eat red meat too often but it was one of those pregnancy cravings! I had this need for POT ROAST! HA! It hit the spot and my hubby and kids LOVED IT!! I also love how simple it is to make. You could serve this with a cauliflower mash, mashed potatoes with organic milk and a couple tablespoons of organic butter or mashed sweet potato. I also roasted some green beans to add a little green to my meal! DELISH!



Crock pot Pot Roast

  • 3 lb. beef roast
  • 1 tbsp. steak seasoning (I used Montreal Steak Seasoning)
  • 1 tbsp. onion powder (You could use 1 med. chopped onion if you prefer)
  • 3 cups beef stock (organic or all natural low sodium)
  • 2 tbsp. worchestershire sauce (check the ingredients to find one without high fructose corn syrup....if it is hard to find one with good ingredients...use balsamic vinegar instead)
Thickening:
  • 2 tbsp. cornstarch
  • 2 tbsp. water
Add roast to Crock pot. Sprinkle seasoning and onion powder over roast. Add beef stock and worchestershire sauce. Cook on low for 8-10 hours. 

30 minutes before serving, remove beef and shred. Be sure to remove and discard fat during the shredding process. Return beef to crock pot. Mix up thickening and add to crock pot. Stir well and cook for 30 minutes to allow sauce to slightly thicken.
