{5 More Clean Eating Lunches}


Who wants some more lunch ideas??? One of my most popular posts is my {Top 5 Clean Eating Lunches} so I thought it would be helpful if I shared with you guys 5 MORE Clean Eating Lunches that I love! The more variety the better!! Right???

1. Stuffed Sweet Potato

This one is so yummy! I think you could pretty much stuff anything into a sweet potato and call it a meal!! I love to put black beans, guacamole and some organic shredded cheese on mine. Sometimes I add shredded chicken or plain Greek yogurt if I have the time. I just pop the sweet potato in the microwave for 10 minutes or so and then add in my toppings. You could easily bake a big batch of sweet potatoes at the beginning of the week and just add your toppings of choice when it's lunch time.

2. Burrito Bowl

Start with some cooked brown rice or quinoa. Add in whatever you would put in your burrito. I like to add roasted red peppers, black beans, sliced avocado and salsa verde. So simple and so delicious! You could also add in whatever kind of meat that you like or have on hand to beef up the protein in this dish! So delicious!

3. Breakfast for Lunch


This is a popular choice for me. I love breakfast so twice in one day sounds a good plan to me! I love to toast some Ezekiel Cinnamon Raisin Bread and add some almond butter to the top. I serve this with some scrambled egg/egg whites and DEVOUR! This only takes me minutes to whip up and is always delicious and filling.

4. Chicken Salad with Crackers

I love mixing up a quick chicken salad with leftover chicken or turkey. I add in some Greek yogurt, pecans and grapes. I like to eat this with Mary's Gone Crackers, toasted Ezekiel bread or on top of mixed greens.

5. Quesadilla 
This is a really simple lunch that I love. One really good tip is to make a large batch of the filling. That way you can eat quesadillas every day for lunch in a matter of minutes. To make my favorite filling, spray a pan with non-stick spray. Add some chopped onions and a few handfuls of baby spinach. Let that cook until the spinach and the onions are soft. Add some drained, rinsed black beans to the spinach mixture. Place this mixture in an airtight container in the fridge. When you are ready to make your quesadilla, place one whole wheat tortilla down in a hot pan sprayed with non-stick spray. Add 1/2 cup or so of the filling. Add some organic shredded cheddar cheese. Top with one more tortilla and let cook until the bottom is nice and golden brown. Flip and cook for another minute or so. TA DA! Done! So good! I like to eat this with some plain Greek yogurt and salsa on the side.

These are all super quick and delicious lunches! You could definitely make these for a light dinner as well!!

  1. I just came across your blog through the hump day blog hop and it looks like we have something in common! I am all about eating clean and working out. Fitness is a big passion of mine! A lot of people think that eating clean is boring, but there are so many yummy healthy recipes that you can make!

  2. I started making chicken and tuna salad by adding nothing but an avocado, some green onions, tomato and sometimes some cilantro. Sometimes i'll roast some butternut squash and throw it in there too. It's delicious.. and fyi.. avocado brightens up my LIFE!!!
