Clean Eating Chocolate Zucchini Oatmeal Muffins





These were a big hit at my house last week! My kids felt like I was giving them dessert for breakfast and they gobbled them up!! These are great by themselves or topped with a little all natural peanut butter! YUMMMM!!!


Clean Eating Chocolate Zucchini Muffins

{makes 15 muffins}

  • 2 1/2 cups oats (I used old fashioned oats)
  • 1 tbsp.  baking powder
  • 1 tsp. cinnamon
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup whole wheat flour
  • 1/2 cup maple syrup
  • 1 cup milk (I used unsweetened vanilla almond milk)
  • 2 bananas (mashed)
  • 1 cup zucchini (grated)
Pre-heat oven to 350 degrees.

Combine all ingredients in a medium sized bowl and stir to combine. Divide mixture into 15 baking cups or a muffin tin sprayed with olive oil/coconut oil spray. 

Bake for 20-25 minutes.

Serve warm or allow to cool and store in the refrigerator in an airtight container.

***To make these a more indulgent treat....you could add 3 tbsp. of dark chocolate chips to batter before baking. YUM! **

    1. I've made it with or without. Adding 2 eggs will give a fluffier texture. Hope tgar helps!

  4. I noticed these don't have any oil or butter. Do they stick to the wrappers?

    1. I usually spray my liners with non-stick spray just to make sure they don't stick! :)
