These were a big hit at my house last week! My kids felt like I was giving them dessert for breakfast and they gobbled them up!! These are great by themselves or topped with a little all natural peanut butter! YUMMMM!!!
Clean Eating Chocolate Zucchini Muffins
{makes 15 muffins}
- 2 1/2 cups oats (I used old fashioned oats)
- 1 tbsp. baking powder
- 1 tsp. cinnamon
- 1/4 cup unsweetened cocoa powder
- 1/2 cup whole wheat flour
- 1/2 cup maple syrup
- 1 cup milk (I used unsweetened vanilla almond milk)
- 2 bananas (mashed)
- 1 cup zucchini (grated)
Pre-heat oven to 350 degrees.
Combine all ingredients in a medium sized bowl and stir to combine. Divide mixture into 15 baking cups or a muffin tin sprayed with olive oil/coconut oil spray.
Bake for 20-25 minutes.
Serve warm or allow to cool and store in the refrigerator in an airtight container.
***To make these a more indulgent treat....you could add 3 tbsp. of dark chocolate chips to batter before baking. YUM! **
