My Top 5 Throw Together Healthy Dinners

Happy Thursday!!

School has started back and sports are back in full swing! I have about 5 go-to throw together meals I think that is so important to have because let's be honest....it can get pretty chaotic about 5 pm every night. Am I right? Yes....planning and meal prepping is hugely helpful but sometimes that doesn't always happen! These are my go-to, throw-together, in a hurry meals!

1.) Salsa Chicken 


This is such an easy dinner that takes little to no effort. In the morning, throw a couple chicken breasts, 1/2 jar of salsa verde and 1 can of green chiles in the crock pot. Let it cook all day on low. Shred. You can eat this 1 million ways.


Add it to a gluten free tortilla....crisp in a skillet. Add salsa or Blue Top Brand Street Sauce.



Add salsa chicken to a sweet potato or rice! Make it like a burrito bowl or nachos! Top how you would top your favorite taco!



Eat as is! This is great leftover! Add leftover veggies and dinner is ready in minutes!


2.) Burger Salad


I like to buy the frozen grass fed beef or organic turkey burgers from Walmart. These can be cooked on the grill in minutes, in a skillet or my favorite way, the air fryer!


Add to a simple salad and top with Tessamaes Ranch and goat cheese for the ultimate low carb meal!


Top it with dairy free cheese, caramelized onions, drizzle with Special Sauce and add a side of veggies! 


Pile it high on a salad, add sauteed peppers, tomato, avocado and DEVOUR!


3.) Meatballs and Sauce


If you follow me on Instastories...you know I eat this all the time!! I love the Beetnik Grass fed meatballs. I throw them in the crockpot with Rao's sauce and cook for a couple hours on high while I do homework with the kids or I put them in a pot and cook for about 15 minutes on the stove! So easy! I make some brown rice or chickpea pasta for the kiddos!


Add to spaghetti squash!


Or Zoodles!



Or Butternut squash noodles!!


4.) Chicken and Veg


This is what I eat constantly! I like to buy 2 lbs of boneless, skinless chicken thighs. I season them with Garlic Himalayan Pink Salt and bake them at 425 for about an hour. I will eat these all week. They are great re-heated in the air fryer!


Sweet potatoes in a steamer bag and asparagus cooked in minutes in my air fryer! You can also roast asparagus in the over with some olive oil and salt/pepper at 400 for about 20 minutes!


Sweet potatoes and air fried green beans! I obviously use my air fryer all the time but you can always just roast frozen whole green beans with olive oil and salt/pepper at 400 until crispy!


My go-to meal. Chicken thighs and okra! I know not everyone is as obsessed with okra as I am so whatever your favorite veggie is....add that to chicken and repeat. Its easy and it takes NO THOUGHT which I am ALL ABOUT! HA!


5.) Breakfast for dinner


A crowd pleaser for sure! I like to make eggs and uncured bacon as my go-to breakfast meal on low carb days. On regular macro days...I LOVE Oatmeal!! My kids love a gluten free waffles, homemade Birch Benders pancakes or oatmeal and scrambled egg dinners!


I absolutely love Blueberry Baked Oatmeal and all of my clients have tried it and love it as well! It is great to re-heat and have to break your fast or as dinner with the fam!


Shocker I am sure but I love to cook my bacon in the air fryer! It is so quick and easy! I can make this whole meal in 5 minutes! My whole family would eat this for dinner all week!
