{Southern Style Collard Greens}

Do you guys know that my husbands favorite hobby is organic gardening?? Oh yes....we have compost bins and worm compost all over the place and tons of veggies that we have been enjoying! The first green that we have harvested from our fall garden is collard greens. They are a love of mine. My Grandma makes THA best collard greens!! I thought I would share with you all her delicious recipe so you can try them out for yourself!




Now....just a note....my grandma uses fat back in hers. Do ya'll know what that is?? It is basically pig fat and man....is it good!! I decided to go more of the bacon route for mine but either way....these are yummy!



Southern Style Collard Greens

  • 2 lbs. collard greens
  • 4 strips of uncured bacon
  • 1 tbsp. of organic cane sugar
  • salt and pepper to taste
Clean collards and wash well. Remove tough stems and rubs. Place in a large pot with enough water to cover. Bring to a boil and cook for 45 minutes or until they are tender. Remove from heat and drain. Return to pot and set aside. Place bacon (or fat back) in a small skillet and slowly cool until done and the fat is rendered. Pour the bacon grease over the collards and toss. Add the sugar, salt and pepper. Toss again. Best if served while hot with a little vinegar if you so choose!
