First of all...let me just say...I love the 21 Day Fix. I have been eating clean for 2 years now and I thought I had a pretty good understanding of what to eat. That being said....I have learned so much in the past 2 weeks. It's one thing to understand the importance of real food but to understand the portion size and the amount of each food group that I should be eating has blown my mind.
I will definitely be doing a second round. I'm getting great results...I will share those with you guys soon. This is the start of my final week! I feel really comfortable now figuring out meals and making sure I eat all of my containers each day.
My sons birthday was Saturday night and it was so hard not to eat the entire cake! Errr..just kidding...well kind of. There was a ton of food but I gave up all the carbs and mayo filled side dishes and stuck with pulled pork (that was delicious) and some chopped raw cabbage. It was actually pretty tasty. I did have a small piece of cake! I considered it one of my yellow containers. I mean...my sweet boy only turns 3 once...ya know? His actual birthday is Tuesday and we're having another party. Wish me luck!
Let me show you some of my favorite meals from the past 2 weeks:
Breakfast: Steel cut oatmeal (made in the Crock pot) re-heated in the microwave and topped with 2 tsp. of all natural peanut butter and honey. Black coffee is my drink of choice in the morning. I eat this everyday! Never gets old!
Snack: Protein Shake (I love MRM all natural whey) and sometimes I add banana and have a thicker shake.
Lunch: Egg omelette with spinach/ham/salsa/occasionally cheese or a salad with chicken and balsamic vinaigrette.
Snack: Plain Greek yogurt/1 clementine/ unsweetened coconut/stevia or Greek yogurt with 1/2 banana and almonds.
Dinner: Sausage/Peppers/Onions/Green beans/sweet potato fries or Whole wheat pita pockets with chicken and hummus with a cucumber/tomato salad on the side.
Before bed: I usually drink hot sleepy time tea and a clementine if I have an extra fruit.
