Ya'll...I hit the jackpot with this recipe. My kids loved these!! They usually snack on fruit but they get bored of that and want something different! I hate that pretty much all "bars" you can find in the grocery store are overly processed, packed with sugar and expensive! These are very easy to make and packed with nutrition. My 2 year old was in LOVE with them! They make a great snack on the go or a great breakfast!
5 Ingredient Sunflower Granola Bars
1 1/2 cups oats (toasted at 350 degrees for 10-15 minutes)
1 cup medjool dates (soaked in warm water until soft and pitted)
1 cup raw sunflower seeds
1/3 cup almond butter
1/4 cup maple syrup
Place pitted dates in food process and process into a thick paste. Add dates, toasted oats, and sunflower seeds to a large bowl. Add almond butter and maple syrup to a separate microwaveable bowl. Microwave for 45 seconds-1 minutes. Stir and pour over oat/date/seed mixture. Stir until combined. **I like to slightly dampen my hands and use my hands to mix the granola mixture. Add to an 8x8 glass dish that is lined with parchment or plastic wrap. Use your hands or a measuring cup to press mixture down evenly in the dish.
Cover and refrigerate for 20 minutes.
Cut into 10-12 granola bars and store in an airtight container in the fridge.
