This bread screams SUMMERTIME to me! Even though it is technically spring, there is nothing better than a a cold, fruity slice of bread to grab for breakfast or snack! :)
Clean Eating Mango Coconut Bread
2 cups oats (processed into flour using a food processor)
3/4 cup mango (chopped)
1/2 cup coconut (I used sweetened coconut from Trader Joe's) **Plus 1 tbsp. for topping if desired
1 1/2 tsp. baking powder
1/2 cup honey
1 cup unsweetened applesauce
1/2 cup plain Greek yogurt
1 tsp. cinnamon
2 eggs
Pre-heat oven to 375 degrees.
Combine all ingredients in large bowl. Stir well. Pour into a loaf pan that has been sprayed with olive oil or coconut oil cooking spray.
Sprinkle top with 1 tbsp. coconut (if desired) and place in 375 degree oven for 65 minutes or until a toothpick inserted comes out clean. Bread is very moist even when fully cooked! That is what I love about it! I like to store mine in the refrigerator and eat it cold but feel free to warm yours up!
**Watch the coconut on the top while baking...cover loosely with aluminum foil to prevent the top from becoming too dark.
