Chipotle Black Bean Burgers

I love black bean burgers. I had the best black bean burger the other day at my favorite restaurant "Toast" in Charlotte, NC. It was so good that I couldn't get my mind off of it!! I was craving it in a major way! They are so fast and so easy to cook! It is also a really affordable dinner! My kids loved these little black bean burgers dipped in organic ketchup.

**Sorry for the not so great pic! I wasn't planning on posting it but this recipe turned out so great! My husband claimed this was the best black bean burger he has ever had so I knew I had to share!


Chipotle Black Bean Burgers
  • 1 1/2 cups black beans (drained and rinsed)
  • 1/2 cup chopped onion
  • 1/2 cup roasted red peppers (chopped)
  • 3/4 cup cooked brown rice
  • 1 tsp. sea salt
  • 1 tsp. paprika
  • 1/4 tsp. chipotle chile pepper powder (I use McCormick brand) **add more if you like things spicy
  • 1 egg
Add all ingredients to a medium bowl and stir to combine. Place half of that mixture in a food processor and pulse until almost pureed. Add back to bowl and stir well. Refrigerate for at least 30 minutes.

When ready to prepare, heat a non-stick skillet to medium. Spray with non-stick spray and add spoonfuls of the mixture to the skillet. Slightly press each burger with the back of the spoon. Cook 5 min. or so on one side and then flip and repeat with the other side. Be very careful in flipping so they don't fall apart.

Remove from skillet and serve warm! I like to serve mine on a salad with salsa verde, Greek yogurt and avocado or in a whole grain pita or wrap! You could also serve this like a burger in a Ezekiel english muffin with organic ketchup, lettuce, tomato and a little Sriracha!

    For the Chipotle Powder, I sugest trying Mitzil's Roasted Chipotle Powder. Because we roast our Chiles, the smoke and heat are completely transformed to deliver more flavor when used ground.
    Look for it on store shelves or ask your store manager to stock it!
