{What I Ate Wednesday} 11/6/13

Happy Wednesday!!! First off....I want to thank EVERYONE for all of their kind comments on my first video EVER!!   I was so nervous but you all made me feel so much better!! I really hope that it helped to actually SEE a lot of the products that I talk about on a weekly basis! I definitely plan on doing more videos now but I really want to know what you guys want to see!! So comment below.....post it on twitter or comment on facebook but tell me what you want to see....what would help you the most....what questions do you have for me!! I really want to help!! Oh and go ahead and subscribe to my channel on youtube so you can see what video I post next!!!

So without further adieu....Let's get started on my WIAW!! :)

Breakfast: My usual Steel Cut Oatmeal topped with chunky all natural peanut butter and organic honey. I have been reading a lot and I think I am switching back to almond butter! It is so much better for you and I love it! Pretty easy switch. One thing I want to find is a crunchy almond butter. They don't have one at my local grocery store so if anyone knows of a really tasty crunchy almond butter without added sugar or oil.....leave me comment and let me know!

Snack: Plain Greek Yogurt with PB2, dark chocolate chips and honey mixed in. Delish!!

Lunch: I got this recipe from Jenn (the host of WIAW) and I am now obsessed with it! It is a savory stuffed baked sweet potato with black beans, guacamole, plain Greek yogurt and a little organic shredded sharp cheddar cheese! YUM! Fast and perfect for lunch or dinner!

Snack: I was doing 100 different things at this time but I was hungry so I grabbed a Larabar and ate it while doing laundry! Fun stuff!

Dinner: This was Crock Pot Beef Fajitas (which I made with pork) from Our Full Plate and it was AWESOME as well!! This was a big hit! This was my first time making cauliflower rice and I liked it! I am a big fan now!!

I am also proud to say that I have been super on top of drinking my water this week! Boy...do I feel better! It makes a big difference!!

  1. I love adding a little honey to my greek yogurt then topping it with granola. Yum! I've made stuffed sweet potatoes before and have been meaning to do it again but keep forgetting! Great reminder!

  3. What exactly is PB2 & where do you get it?

    1. PB2 is basically a peanut flour or powdered peanut butter. They basically remove the oil. You can get it at Walmart or online. I buy mine off Amazon. It is great for flavoring yogurt or shakes!

  4. I love adding peanut butter or pumpkin butter to my greek yogurt and ketchup to my sweet potato :)

    1. Yummm...pumpkin butter!! I put ketchup on my sweet potato fries...haven't tried it on a baked sweet potato!
