{What I Ate Wednesday} 11/13/13

Hi!!!! Happy Wednesday!! Is it just me or is everyone decorating earlier this year for Christmas?? Now it is all I can think about....I am so ready to put my Christmas tree up!! Although preventing my 22 month old from destroying it on a daily basis is something I am NOT looking forward to!! Hopefully he won't mess with it!! HA HA HA HA! Yeah right!


I am actually really proud of myself....I am been branching out and switching up my meals! I am a creature of habit so this isn't easy for me!! 



Breakfast: Quinoa Porridge: No steel cut oatmeal this week....I thought I would change it up a little. I just mix cooked quinoa with some almond milk and half of mashed banana. Heat it on the stove until the milk is absorbed....add some cinnamon and toppings! Easy....right? I added raisins and walnuts.

Snack: Green Monster Smoothie: My goal is to add more green smoothies into my life. I don't eat enough veggies so this is a really easy way to sneak them into my diet.

Lunch: Savory Stuffed Sweet Potato: My new favorite lunch! I just microwave a sweet potato until soft and top it with whatever is in my fridge! HA! This one was topped with leftover Crock Pot pork, guacamole and shredded cheese. Delish!!!

Snack: Apple and Almond Butter: This time I chopped up my Gala apple, sprinkled some cinnamon on top and microwaved it for 1 minute or so. Then I drizzled almond butter on top! I drank some peppermint tea on the side! It was actually starting to snow outside at this point so I needed something warm! Let me just tell you....snow in Charlotte, NC is rare so we were all ecstatic!

Dinner: Sweet Potato Shepherds Pie: I loved this. My kids were not huge fans but the hubby and I devoured it. I used organic ground chicken instead of turkey and omitted the celery (not a celery fan) and I thought this recipe was a keeper!

Dessert: 2 squares of dark chocolate: After dealing with my 4 year old falling down my stairs and cleaning my 22 month old's crayon masterpiece off my wall...I deserved this!

  3. I need to start doing that with sweet potatoes! I love them and typically have some cubed and roasted in the fridge but topped with savory foods sounds for lunch sounds perfect!
