{Dark Chocolate Chewy Rice Bars}

These are one of those treats that you eat...then you jump around a little with a big smile on your face because they are DELICIOUS and pretty healthy for you all at the same time!! They have 5 ingredients and are the perfect dessert or snack. I don't feel bad giving my kids these AT ALL! I also thought they would be the perfect Halloween snack to serve at Halloween parties or festivals. Please...Please give them a try! You won't be disappointed!


Dark Chocolate Chewy Rice Bars

{makes 12 bars}

  • 2 1/2 cups puffed brown rice cereal {I used this one}
  • 1/4 cup brown rice syrup (Also works with honey)
  • 1/2 cup all natural peanut butter (or nut butter of choice)9-
  • 1/3 cup dark chocolate chips (I used Hershey's Special Dark)
Place cereal in a large bowl. Place brown rice syrup and peanut butter in a small glass bowl and microwave for 30 seconds to make it easier to mix in. Pour syrup mixture over puffed rice and stir until combined well. Place in 8 x 8 dish that has been sprayed with non-stick spray. It helps to slightly dampen your hands and press rice into dish evenly. This will help everything stick together well.

Melt chocolate in microwave for 30 second intervals until completely melted. Pour over bars and use spatula to spread evenly. 

Cover and refrigerate for 30 minutes to allow chocolate to harden. 

Cut into 12 bars. Store in refrigerator.

Devour!
