{Meal Planning Monday} 9/16/13

Happy Monday you guys!!! I don't know why but I am actually kind of excited for Monday to be here! I haven't worked out in 3 days and I am ready to get back to it today!! I am also really excited to switch my dinners up a little. Now that the weather is getting a little cooler, I plan on adding in some soups, fall vegetables and more meat! I feel like I really have eaten very little meat for the past few months and I want to try to increase my protein intake. I also crave it and that makes me think I may be deficient in iron or something! It is very rare for me to crave meat....so I am going to give my body what it wants!! In a healthy way...of course!





Monday: Apple Onion Pork Chops over Butternut Squash Mash ** I actually made this last night but I will be eating leftovers tonight. It was DELICIOUS!!

Tuesday: Chicken, Lime and Avocado Soup with Organic Blue Corn Chips

Wednesday: Buffalo Chicken Pasta {Paleo} with Roasted Green beans

Thursday: Out for dinner

Friday: Deep Dish Cheeseburger Pie with Roasted Broccoli

Saturday: Out for dinner/Take out

Sunday: Chicken and Quinoa Casserole with Roasted Asparagus

  1. Yum I am so excited for soup too! I plan on whipping up a batch of sweet potato and leek soup this weekend.

  2. All of those recipes sound yummy and I can't wait to try some! I'm trying to eat better and I'm starting the 90 day challenge with my sister today!

  4. I wish it was cool enough to have soup! I wish I was a pork fan. That recipe sounds amazing!

    1. It's not cool enough here either! It's still in the 80's!! I'm mentally in fall mode though!! You could use chicken breasts in that recipe and it would be just as delicious!! :)
