Healthy Sweet Potato Pie Oatmeal Muffins
{Makes 15 muffins}
- 3 cups oats (Any kind will work...I used Quick Oats)
- 1 cup cooked sweet potato (mashed--I used 1 medium sweet potato)
- 1 cup milk (I used unsweetened vanilla almond milk)
- 1/2 cup unsweetened organic applesauce
- 2 organic eggs
- 1/2 cup pure maple syrup
- 1/2 tbsp. pumpkin pie spice
- 1/4 cup raw pecans (chopped)
Pre-heat oven to 350 degrees.
Place all ingredients in medium sized bowl and stir until combined. Divide mixture into 15 baking cups or a muffin tin sprayed with olive oil/coconut oil spray.
Bake for 25 minutes.
Serve warm or allow to cool and store in refrigerator in airtight container.
