Skinny Reese's Pudding
Inspired by I Wash You Dry
(serves 4)
- 2 egg yolks
- 4 tablespoons cornstarch
- 6 tablespoons Rapadura (or other organic unrefined sugar)
- dash of salt
- 6 tablespoons PB2 *a.k.a peanut flour (or 3 tablespoons Natural Peanut Butter)
- 1 tsp. pure vanilla extract
- 1 1/2 cups Unsweetened Vanilla almond milk (or milk of choice)
- 3/4 cup Truwhip (all natural whipped topping)
- 2 tbsp. unsweetened cocoa powder
- dark chocolate chips **optional**
Combine yolk, cornstarch, Rapadura, salt and PB2/or Peanut Butter in sauce pan. Cook on medium heat. Slowly add in milk while whisking constantly until mixture starts to thicken. Remove from heat, continue whisking and add in vanilla. Whisk until smooth. Divide in individual bowls. Cover with plastic wrap. Make sure you put the plastic wrap right on top of the warm pudding before placing it in the refrigerator. Refrigerate for a few hours. When ready to serve, mix Truwhip and cocoa powder until combined. Place a dollop on top of each pudding cup. Garnish with a few dark chocolate chips if desired.
**Each serving will be around 220 calories! If using peanut butter instead of PB2....it is around 260 calories for this sweet treat! Dark Chocolate Chips will add to the calorie totals. This recipe is very easy to double or triple for a crowd! :)
