Dijon and Pear Kale Salad

Kale is kind of THE perfect food! It has iron, antioxidants, vitamins, lowers cholesterol, decreases inflammation in the body and even detoxes your body! Really?? That is amazing!! The trick is finding a way that you can enjoy Kale so that you can easily eat it all the time!! My favorite way to eat kale is either in a green smoothie or a marinated salad. Kale can be slightly hard to eat raw....if you ask me. The trick is making a delicious dressing and letting the kale marinate in the dressing for a few hours before you eat it. It absorbs the dressing and softens! SO good!!! My husband devours this salad! He loves to take it for lunch because it is just as good leftover! Perfect to mix up a huge batch, separate in Tupperware and eat all week!



Dijon and Pear Kale Salad

{Serves 4}

  • 1 small bunch of Kale (hard stems removed and chopped) **I used 1/2 bag of pre-washed and chopped Kale from Trader Joes
  • 1 bartlett pear (sliced in bite size pieces)
  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. Braggs Organic Apple Cider Vinegar
  • 1 tbsp. Dijon Mustard
  • 2 packs of stevia
  • salt and pepper to taste
Add chopped kale and pear to large salad bowl. In a mason jar or small bowl, combine olive oil, vinegar, mustard, stevia, salt and pepper. Shake or stir until combined thoroughly and add to salad. Mix salad until all of the kale is covered with dressing. Cover with plastic wrap and refrigerate for at least 2 hours.
