{BLAT Wraps with Goat Cheese}

Bacon....Is that clean??? No...not really. Bacon is something that my husband LOVES!! He is transitioning into a "clean" diet and he was craving bacon desperately!! I think that the best motto to have is... all things in moderation. If you are too strict with yourself about ANYTHING....it won't be something that you can stick with the rest of your life. When I starting eating clean....I knew this was something I could do forever. I allow myself a couple of splurges each week so that I don't feel deprived. That is what I wanted to do for my husband. Give him the one food that he was craving so that he didn't feel deprived and stop by McDonald's for Big Mac on the way home! Although I do suggest buying organic bacon if you can find it. I ending up finding a Nitrate/Nitrite free bacon at my local supermarket and went with that. These wraps are delicious and super fast to whip up any night of the week!



BLAT Wraps with Goat Cheese

{Serves 4}

  • 2 cups iceberg lettuce (chopped)
  • 2 small organic tomatoes (chopped)
  • 6 slices of Nitrate/Nitrite free bacon (crumbled)  **Organic if possible
  • 1 medium avocado (diced)
  • 2 oz. mild goat cheese with herbs (diced into small pieces)
  • Whole grain tortillas/Wheat Pita Pockets for serving
Add chopped lettuce, tomatoes, bacon, avocado and goat cheese to medium bowl and stir to combine. 

Scoop mixture into pita pocket, wrap or eat plain as a salad.
