{Healthy Sweet Potato Pie Oatmeal Muffins}

Call me crazy! I know, I know. Not only am I obsessed with oatmeal muffins but now I must think that it is Fall instead of Summer...Right??  Let me just say that Sweet Potato Pie is good any time of the year! Sweet potatoes are SO good for you!! They are packed with vitamins, minerals and antioxidants. There are many reasons to add more sweet potatoes to your diet! I eat 2 of these muffins with a side of scrambled egg whites/whole eggs for breakfast. They are also a great snack. :)

Healthy Sweet Potato Pie Oatmeal Muffins

{Makes 15 muffins}

  • 3 cups oats (Any kind will work...I used Quick Oats)
  • 1 cup cooked sweet potato (mashed--I used 1 medium sweet potato)
  • 1 cup milk (I used unsweetened vanilla almond milk)
  • 1/2 cup unsweetened organic applesauce
  • 2 organic eggs
  • 1/2 cup pure maple syrup
  • 1/2 tbsp. pumpkin pie spice
  • 1/4 cup raw pecans (chopped)
Pre-heat oven to 350 degrees.

Place all ingredients in medium sized bowl and stir until combined. Divide mixture into 15 baking cups or a muffin tin sprayed with olive oil/coconut oil spray.

Bake for 25 minutes.

Serve warm or allow to cool and store in refrigerator in airtight container.
