Strawberry Honey Oatmeal Muffins

A staple in our house these days are oatmeal muffins. No one in my house will eat hot oatmeal and we really don't have time to mess with all that! We need something fast and healthy that everyone likes. Oatmeal muffins completely fit the bill! My kids love them and they are fast for my husband and I just to pop in the microwave in the morning. I didn't have all the ingredients to make my usual muffins so I improvised and they were a huge HIT! Needless to say...they didn't even last 24 hours in my house!

Strawberry Honey Oatmeal Muffins

Makes 14 muffins

  • 3 cups Quick Oats (can use regular old-fashioned oats or Gluten Free) ** Grind oats in food processor for a smoother texture if desired**
  • 3/4 cup unsweetened vanilla almond milk
  • 1/4 cup honey (local if possible)
  • 2 eggs
  • 1 tsp. pure vanilla extract
  • 1 cup all natural applesauce
  • 1/4 cup plain non-fat Greek Yogurt
  • 3/4 cup diced fresh strawberries
Combine all ingredients in a large bowl. Add strawberries last. Stir to combine. Divide into muffin pan sprayed with olive oil spray or in baking cups. 

Bake at 350 degrees for 25-30 minutes until golden brown.

Once in an airtight container in the refrigerator. To re-heat just pop in the microwave for 30 seconds! Great for a quick breakfast or snack!

**Each muffin is around 100 calories!! Woo hoo!

  1. I can't wait to try these! I have a question though, I have a sever nut allergy, so almond milk here...suggestions for a replacement? just organic milk? Thanks!

    1. **so NO almond milk here...haha, sorry.

    2. Organic milk or any milk substitute would work just fine! I hope you enjoy them as much as I do!

  2. what can you use to replace Greek Yogurt?

    1. Sour cream works too! I'm just about to put these in the oven....
