{What I ate Wednesday}


One of the questions I get asked all the time is "So what do you eat??" When starting out on my "clean eating" venture...I read many books. I read quite a few Tosca Reno books and 1000 blog posts about clean eating. I loved the idea of it all but I thought that actually following the plan may be a little out of my reach. I mean..I have 2 kids under 4! My life consists of running after them 24/7 and eating is usually an after thought. I used to just grab something packaged or microwavable! Convenience is my number one requirement. After doing my research I realized that this isn't actually hard at all. I am not saying that I eat 100% clean because I don't. I probably eat way too much fruit and not enough protein most days but what I can say is that my diet is very healthy and I feel AWESOME! I have WAY more energy than I have ever had in my entire life. 

Breakfast:

I love a quick and easy breakfast. This is my Peanut Butter Fruit and Nut Granola Bar crumbled in a bowl, topped with a handful of blueberries and unsweetened vanilla almond milk! I usually have a cup of black coffee as well. Okay....maybe 2 cups of black coffee but who is counting???

Snack:


A pear and around 14 almonds is my snack obsession these days. I eat it everyday! Oh and lots of water! I drink close to a gallon a day! 

Lunch:

Yummm. Banana wraps are a family favorite these days. I just get one (La tortilla high fiber low carb is my favorite) tortilla, spread it with 1 tbsp. almond butter, sprinkle with cinnamon and top with a small banana. Roll it up and cut it in half and I promise it will be one of the best lunches you have ever had! More water! Drink, Drink, Drink!

Snack:


More fruit??? I know, I know. I can't help it. No one ever got fat eating fruit...Right? One small apple and a part skim string cheese is the perfect combo! And yes....more water!

Dinner:



I enjoy a Kombucha while cooking dinner. I used to drink a diet coke at this time but I gave all that up and I am NEVER going back. There are a million different reasons to add Kombucha into your life. Check it out. It's good!!! Gives me a little extra pep in my step at the end of the day! Now to dinner!


Last night I made roasted asparagus. Simple and I love it. Just spray a little olive oil spray on a baking sheet and sprinkle some sea salt and pepper on the asparagus. Shake them around a little and roast at 375 degrees for 25 minutes. For the chicken I made Dashing Dish's Worlds Best Baked Chicken. Let me tell you....It was good!! My husband ate 3 pieces if that tells you anything!! 

For a workout I did 45 minutes of cardio. My cardio consisted of a 2.5 mile walk pushing a double jogging stroller with my kiddos. It was a beautiful day and I loved every minute. :)
