Breakfast On-th-Go Muffin

I know how crazy mornings can be. Rushing just to get out the door and to work on time. Sometimes you just don't have time for breakfast. My mornings are chaotic and I don't have to go to work. Just trying to balance eating a healthy breakfast while feeding my kids and getting them ready for the day is sometimes impossible....or at least that is what I used to think!! I have found some super fast and healthy breakfasts that I adore and I am going to let you in on one of the quickest and tastiest!!

Breakfast on the Go Egg Mcmuffin

  • olive oil cooking spray
  • 2 egg whites (or however many you would like) 
  • salt/pepper/garlic powder/onion powder
  • Ezekiel English Muffin (in the freezer section of the grocery store)
Just grab your coffee mug and spray it with olive oil spray. Add 2 egg whites and season with salt and pepper and whatever seasonings you like. Microwave for 1-1:30 minutes and Voila!! Eggs are done! You may need to adjust time if you use more egg whites.

Grab an Ezekiel muffin and pop it in the toaster. Once toasted....add egg white omelet.

Now that is super basic. The fun part is what you add to it. :)

Optional additions:
salsa (my favorite)
turkey bacon
low fat sliced cheese
low sugar fruit preserves or frozen berries defrosted and honey to sweeten
baby spinach
Hot sauce

The possibilities are endless. Give it a try and let me know what toppings you use!

  1. Awesome! I have the Ezekiel bread, but had no idea they made English muffins! What grocery store did you find them at?

    1. Hey Airen! I get them at Harris Teeter in the frozen section. They are SO good!!

  2. yum! I love that Ezekiel bread stores well in the freezer since I don't use much on a weekly basis. It saves me money and it's so healthy!
