{Tropical Fruit and Greek Yogurt Salad}

So..who has big plans for Super Bowl this weekend??

Don't you hate going to a party and looking around at your food options and feeling sad because you are trying so hard to be healthy or lose a little weight and there aren't any healthy food options for you to eat? I either don't eat anything or I end up eating some "not so good" for me foods and feeling really guilty later. This year I refuse to let that happen!! I am making my own healthy but delicious treat to enjoy during the Super Bowl!!

I am kind of obsessed with Greek yogurt lately. If you follow me on Instagram you know that I have been hooked on the plain Greek yogurt/clementine/coconut combo for my daily snack. I thought it would be fun to kick this up a notch for my Super Bowl party!

This is what I came up with....It is totally delicious and something everyone will enjoy!! This delicious bowl will make you forget that you are actually eating healthy!

Tropical Fruit and Greek Yogurt Salad
(serves 4-6)

  • 2 cups Chobani Plain Greek yogurt
  • 2 tbsp. honey
  • 2 tsp. pure vanilla extract
  • 4 clementines peeled and segmented
  • 1 1/2 cups of chopped fresh pineapple
  • 1 kiwi (peeled and chopped)
  • 1 cup red grapes (sliced in half)
  • 1/4 cup unsweetened coconut flakes (toasted in a dry skillet until slightly browned}
Add yogurt, honey and vanilla to medium sized bowl and stir to combine. Add chopped fruit and combine. Sprinkle toasted coconut on top!!! Enjoy!!

Have a great weekend you guys!!
