So for today's {Quick Tip}.....Oven Roasted Veggies!
My sister is starting out on her weight loss journey and we were discussing side dish recipes. My go-to side dish pretty much every night is a roasted veggie. I don't do side dish casseroles, heavy starch sides like I used to. I love to get my veggies in this way! It is simple, delicious and my family loves it!!
This is how simple it is:
- Buy a bag of frozen veggies. Organic if possible. Sure.....you could always use fresh but I load my freezer up with frozen veggies so I never have to worry about veggies going bad and they are always cheap!
- Cover baking sheet with aluminum foil. Spray with olive oil cooking spray. Spread veggies out in a single layer on baking sheet. Spray veggies with olive oil spray or do a light drizzle with olive oil or coconut oil.
- Sprinkle with whatever seasonings you like. Salt, Pepper, Onion Powder, Garlic Powder are my usual but cinnamon is a must for sweet potatoes or carrots. You could spice things up with some chipotle pepper spice or cayenne if you are brave enough!
- Bake at 400 degrees for 30-45 minutes depending on the veggie. I usually give them a good shake or turn with a spatula half way through. You basically just want the veggie roasted (not burnt). There is no way you can mess this up! Just keep an eye on them!
My favorite veggies to use are whole green beans, cut okra, asparagus, brussel sprouts, carrot chips, sweet potatoes, and broccoli florets. The possibilities are endless!!
