{Green Curry Potatoes}

 Hi!!!! Long time....no talk! I have been making some absolutely delicious recipes lately and thought it would be helpful to type these up so you can save, pin or print and give them a try!!

A quick update: If you follow me on Instagram than you probably know all this but for the last year or so I have been eating a plant based diet. It was a challenge that I took to go vegan for a month. Let's just say I realized the benefits very quickly and decided I wasn't looking back!! I love feeling truly nourished with whole foods, my cholesterol is AMAMZING for the first time in a LONG time, my digestion is WAY better and my cystic acne finally cleared up. I am going to try to keep up with uploading recipes and possibly "What I eat in a day" posts like the good ol' days. A lot of what I eat now is VERY similar to how I ate when I first started this blog.

Anyways...I won't ramble on. I'll get straight to the point!! CURRY POTATOES!!!


{Green Curry Potatoes}


-3 lbs. red potatoes pre-cooked and chopped in bite size pieces (I like to pre-cook these in my instant pot)
-2 large zucchini (chopped)
-1 cup frozen green peas

*Sauce *
-1/4 cup chopped green onions
-1 tbsp. minced garlic
-2 tbsp. green curry paste
-1 tbsp. yellow curry powder
-2 tbsp. coconut aminos
-2 tbsp. lime juice
-1 tbsp. coconut sugar
-1 can lite coconut canned milk
-1 cup low sodium veggie broth plus a couple tbsps. to saute green onions and garlic
-salt and pepper to taste

1.) Saute green onions and garlic in large skillet with a couple splashed of veggie broth until green onions are soft. Add the rest of the sauce ingredients and stir. 

2.) Add veggies and stir to cover with sauce. Bring to a boil. Cover and simmer for 20-30 min until sauce has slightly thickened.

3.) Eat warm or save for meal prep for the week! This is delicious plain, topped with some cilantro or added on top of some jasmine rice!
