Crock Pot Vegetable Beef Soup
- 1 large onion (chopped)
- 1 lb. lean ground beef (or ground turkey or chicken)
- 1 cup frozen peas
- 16 oz. organic mixed vegetables (mine has green beans, carrots, corn and peas)
- 1 cup frozen baby lima beans
- 24 oz. stewed tomatoes (I use canned tomatoes from my mother-in-law's garden)
- 2 cups water
- salt and pepper to taste
Brown ground beef and onions in a skillet until beef is fully cooked and onions are translucent. Place in Crock pot. Add remaining ingredients (except for salt and pepper.) Cook for 6-8 hours on low. Salt and pepper to taste before serving.
**Feel free to play around with the veggies in this soup! You could really use any veggies that you like!! Sometimes I add shredded cabbage to this as well! So good!

DeleteWhat size crockpot did you use? Mine is a 5qt and looks to be too full, and I haven't even put the water in it yet. Is there anyway I can save it and cook it on the stove?
ReplyDeleteMy Crock Pot is a 6 qt. You could absolutely cook this on the stove! :)
DeleteMade this last night with ground turkey that I had left over from some stuffed peppers. It was really good. My five year old complained at first because of all the veggies but when i told him he had to eat it or no dessert, he ate it and said how delicious it was :) I only did half the recipe and it was enough for me to have some for lunch today too.
