Carrots are ridiculously good for you and I very rarely eat them but grated in this muffin, you barely know they are there!! This is one easy way to get carrots in my kids too! Plus they remind me of carrot cake.....one of my favorite desserts! SCORE!!

Hi, do these have a strong banana flavor?
ReplyDeleteI don't think they taste overly banana but you could always substitute with 1 cup of applesauce instead. :)
DeleteHow do these freeze? There is only 2 of us in the house and I don't want to eat the same thing all week so I was thinking of making a few flavours and freezing them so that I can have a variety. Sounds like they go so quick your house don't know if have had the chance to freeze them, but let me know!
ReplyDeleteHi!! I would imagine that these would freeze well but they never last long at my house!! You'll defint have to let me know!! :)
DeleteDo you have the nutrition facts on these muffins?! :)
ReplyDeleteI actually don't count calories or anything really but I pasted it in my fitness pal and these come up to about 80 calories a muffin. Hope that helps! :)

ReplyDeleteCould baby food carrots be used in place of fresh possibly? I sometimes keep that sort of thing around just for baking (carrots, bananas, sweet potato)
ReplyDeleteIt would change the texture a bit but I think it would still be yummy! :)
